Ingredients:

  • 1 cup long-grain rice

  • 2 cups vegetable broth

  • 1 medium onion, finely chopped

  • 1 bell pepper, finely chopped

  • 2 celery stalks, finely chopped

  • 3 cloves garlic, minced

Instructions:

  • In a medium saucepan, bring the vegetable broth to a boil. Add the rice, reduce heat to low, cover, and simmer for about 15-20 minutes or until the rice is cooked and the liquid is absorbed.

  • In a large skillet, heat the olive oil over medium heat. Add the onion, bell pepper, and celery, and sauté until they begin to soften, about 5 minutes.

  • Add the garlic and mushrooms to the skillet and cook for another 3-4 minutes until the mushrooms release their moisture and become tender.

  • Stir in the zucchini and chopped tomatoes and cook for an additional 5 minutes until the vegetables are tender and well combined.

  • Add the cooked rice to the skillet and mix well. Stir in the Cajun seasoning, smoked paprika, dried thyme, salt, and pepper. Cook for an additional 2-3 minutes, allowing the flavors to meld together.

Garnish with chopped green onions and fresh parsley before serving.
